Celebrate Fat Tuesday with Breakfast Cake

Fat Tuesday, also known as Pancake Day or Shrove Tuesday is known for having pancakes for dinner! I can remember growing up and my mom always serving Pancakes on Fat Tuesday. Now that I'm a mom, I do wonder if she just did that so that she could skip planning a meal for one night. 😉
Historically, Fat Tuesday kicks off the season of Lent in Christian religions which calls for the fasting of sweet treats and indulgences. So Fat Tuesday and a pancake dinner is a way to get all your goodies in the night before! We love having pancakes for dinner in my house but even more, my boys love having Breakfast Cake!
What is Breakfast Cake? It's my fast and easy way to make pancakes!
Ingredients:
2 Cups Pancake Mix (we use Kodiak brand for added protein)
1 Can Pumpkin
1/4 Cup Maple Syrup
2 Eggs
1/2 Cup Milk
1 tsp cinnamon or pumpkin spice
Mix ingredients together and pour in cake pan. Top with chocolate chips and sprinkles. Bake at 350 degrees for 30-40 minutes (depending on thickness/pan size).
I've made other versions of this, banana chocolate chip, zucchini, sweet potato. Even when I sneak the veggies in, it only lasts about a day before it's devoured!
